The Grand Dining Room’s formally attired and classically trained wait staff graciously serve course after course of European-inspired cuisine or delectable alternatives such as healthy Canyon Ranch® signature dishes. Menus change daily with a brilliant choice of at least ten appetizers, soups and salads and twelve entrées at dinner.

Polo Grill

Polo Grill embodies all the elements of a classic steakhouse, expressing them with timeless reverence. Each course stands as the very definition of time-honored favorites, most notably the beef dishes, all of which are USDA Prime and dry-aged for 28 days to enhance tenderness and flavor.


Presented on elegant, custom-designed Versace china, masterfully prepared dishes exemplify the essence of Tuscany and celebrate Italy’s culinary passion. Classic dishes from various regions of Northern Italy are featured, many from recipes that originated with the mothers and grandmothers of our own Italian culinary staff.


Exquisitely decorated with heirloom antiques, pickled wood furnishings and art from Jacques Pépin’s personal collection, Jacques was modeled after a Parisian bistro. Each country French dish served is a classic, ingeniously reinterpreted by Master Chef Pépin—Jacques is absolutely magnifique!

Red Ginger

Red Ginger’s chefs have created contemporary interpretations of Asian classics. The interior simply glows with ebony woods, a soothing waterfall wall and striking, modern Asian artworks, all with a nod to feng shui. In Red Ginger, the gustatory pleasures are as striking as the visual ones.

Comprised of over 120 islands in the Adriatic Sea, Venice is one of the world’s most unusual cities. Here, canals replace streets, and residents use water taxis to navigate the city. The bustling square around St. Mark’s Bisilica, is certanly one of the world’s best known examples of Byzantine architecture, a still-impressive relic from the days when Venice was the world’s leading maritime power. Arriving early in Venice allows you time to explore, enjoy and get lost a bit in the world’s most fascinating city.

The largest city on the Adriatic Coast, seaside delight Split has been influenced by being under Roman, Venetion, Austrian, Fench, Italian and Yugoslav control. There is an abundance of culinary delights throughout its restaurants and wine cellars. Sites such as Diocletian’s Palace and Mausoleum, the Grgur Ninski Statue and the Cathedral and Bell Tower of St. Domnius justify its position as a UNESCO-designated World Herritage Site. The city’s coves offer several lovely beaches, including central Bacvice.

The island’s capital of Thira is a maze of whitewashed buildings and narrow cobblestone streets atop a cliff hundreds of feet above the island’s main port, where yatchs and cruise ships anchor. Small, family-owned vineyards fot the center of the island. And for a romantic moment, head to the tiny town of Oia and watch the sky turn a dozen shades of pink and orange as the sun slowly drops ove the horizon.

Nature lovers rejoice in idyllic Patmos, encompassed by pristine blue waters sheer cliffs and volcanic soil. Stumble upon popular stunning beaches and dive into warm water of the Aegean Sea. Adventure to the Cave of the Apocalypse or fire up your taste buds with a culinary adventure at Patmos’ top restaurants and tavernas.

Once the capital of the Roman province of Asia Minor, this coastal town is now an archeologist’s dream with easy access to the ancient city of Ephessus. This former Greek banking and trading center is rich with historic sites, includinf the Great Theater, The Temple of Hadrian, and the Temple of Artemis, one of the Seven Wonders of the Ancient World.

In addition to being the cultural and financial center of Turkey, Istanbul is the only city in the world taht spans two continents. There are more exciting restaurants, bars, galleries and clubs around town than exquisite Ottoman mosques, although Istanbul’s history and exotic culture are present everywhere. At night you’ll be immersed in one of the world’s most esciting scenes, with something for everyone including friendly gay bars & nightclubs.

Spend a day strolling through the Grand Bazaar, explore the famous Blue Mosque, or wander Through the majestic Topkapi Palace, with its gardens libraries and 400-room harem.

Quaint, whitewashed villages contrast with sexy, international beach crowds and a pulsing nightlife in Mykonos, one of the world’s hottest gay destinations. Chora, the island’s main town, is a tangle of twisted, cobblestone alleys that reveal a surprising range of interesting boutiques, galleries and restaurants. Work on your tan and enjoy the scene at the super gay Super Paradise Beach before heading back into town for a sunset dinner then enjoying the vibrant nightlife that has made Mykonos a true international hotspot.

Athens has ben the center of Greek civilization for some 4,000 years. The capital of modern Greece, it’s still dominated by 5th-century-B.C.E. landmarks, including the Acropolis, a hilltop citadel topped with ancient buildings such as the colonnaded Parthenon temple, as well as treasures in the National Archaeological Museum. In recent years, a lively gay scene has emerged in Gazi district. The area is populated with many chic restaurants, art galleries, bars and boutique shops.
